Responsibilities:

  • Assist Executive Chef in leading the Chinese side of kitchen team and collaborate with Executive Chinese Chef in all areas that have integrated cuisine positioning with company-wide solutions.

  • Responsible for planning and overseeing that all Chinese culinary production is maintained at consistent high standards and that no outlets stray from their original set concepts.

  • Ensure smooth and efficient operation of all Chinese kitchens and that all adhere to their budgeted operating costs of sales.

  • Monitor food quality, cost control and hygiene standard, assist in company-wide Northern Cuisine menu development, planning and ongoing improvements.

  • Train, counsel and coach team member, taste and monitor food produced.

Requirements:

  • High School graduate or above.

  • At least 15 years’ experience in medium-to-large scale hotels with multi Chinese outlets, including 6 years of high production experience with at least 5 years as Executive Chef with Northern Chinese cuisine expertise.

  • Experience in Michelin, Black Pearl or other industry awarded Chinese outlet being an advantage.

  • Possess regional Northern Chinese specialty cuisine expertise is essential, and knowledge of other Chinese specialty cuisine being an advantage.

  • Possess Food safety certificate.

  • Fluent in Mandarin and conversational in English.
