Job Responsibilities 
  • Strategic Operations: Manage the restaurant/bar as an entrepreneurial business unit, focusing on productivity and innovative best practices.

  • Financial & Resource Management: Monitor business performance, maximize resource capacity, and manage financial reports, timekeeping, and leave accruals.

  • Staffing & Rostering: Ensure optimal staffing levels through accurate rostering while aligning team skills with operational needs.

  • Team Leadership: Empower and coach team members to take ownership of tasks, fostering a collaborative environment that utilizes diverse skills.

  • Information Systems: Establish clear communication channels across all levels to enhance decision-making and operational transparency.

  • Customer Service Excellence: Set and monitor service goals, integrating customer feedback into planning to drive service enhancements.

  • Change Management: Lead initiatives for successful change and foster innovation to adapt to a shifting business environment.

  • Internal Partnerships: Treat internal stakeholders as customers, ensuring their needs are met to support long-term organizational accomplishments.

Job Requirements 
  • Professional Experience: Proven management experience in a five-star hotel or high-end F&B organization with high-volume sales exposure.

  • Fine-Dining Background: Prior experience in hotel F&B management or fine-dining environments is a distinct advantage.

  • Educational Background: Degree holder in Hotel and Restaurant Management or equivalent professional training.

  • Beverage Expertise: Profound knowledge of wines and beverages; internationally recognized wine qualifications (e.g., WSET) are preferred.

  • Concept Development: Demonstrated experience in creating and implementing new beverage concepts within a hotel/resort setting.

  • Regulatory Knowledge: Solid understanding of food safety regulations and practices, specifically HACCP.

  • Leadership Skills: Strong track record in team building, coaching "star performers," and managing through influence.

  • Language & Communication: Good command of spoken and written English, Cantonese, and Mandarin; excellent presentation skills preferred.
